Chocolate Making Process


When the beans arrive to the factories they are subjected to inspection and quality control. They are then roasted to remove any remaining moisture and create the final taste of cacao. After roasting the beans are processed further to remove the pellets and then the nibs are ground to a liquid form and the final milling begins. At this time there are two different processes that the beans may go through.





Making the Cacao Powder

One process is the pressing of the cacao mess. This process is done by using pressure to squeeze the cacao butter out of the mess, the separating the butter from the powder. Afterwards, the powder part of the mess is further dried and then ground into a fine powder.

How Chocolate is Made
The cacao mess is then combined with the cacao butter and then the conshearing begins. After the conshearing the chocolate will have a very fine structure and taste.
The Seasoning of Chocolate
The two main seasonings in chocolate are sugar and vanilla.
